Only fresh pork legs from farms and slaughterhouses recognized by the Consortium del Prosciutto di San Daniele (from Friuli - Veneto, Veneto, Emilia Romagna, Lombardy, Piedmont, Tuscany, Umbria, Abruzzo, Lazio, Molise) are used for production.
The production of the ham begins after a strict quality check of the fresh legs. Expert hands take care of the salting and rub the relevant areas with salt with great care. Afterwards, thanks to the special microclimate of San Daniele, the product is allowed to rest and mature in airy rooms for drying, with careful controls. Long months in the rest rooms (to improve quality, the required time is voluntarily extended), constant care as well as careful air and temperature dosage give the hams with the name Picaron their shape and character.
The minimum maturation period for DOP quality classification is 13 months, our San Daniele DOP is aged for 18 months.
